Would you like a cup of tea?

What are you cooking tonight?
This is something that is said at some point in our day at the office, so I thought it would be a good and helpful idea if we posted recipes on our blog, as we all need some inspiration sometimes.
It also made me think it would be nice to have some interaction with our web viewers, so if you have a recipe that is your specialty or one that you just enjoy making, then please send them to me at info@blossommotherandchild.com with a picture of the meal and they can be put on our ‘what are you cooking tonight?’ section.
As it’s Halloween tomorrow, I thought it would be perfect to put on a Winter warming soup, this is one I made which is nice and easy and my son’s favorite, a good way of helping him get part of his 5 a day, hope you enjoy it!

Pumpkin Herby Soup

Suitable for Vegetarians
You will need:
- 2 large onions, chopped
- 2 cloves of garlic, crushed
- 1 medium pumpkin, deseeded and cut into cubes
- 1 large sweet potato, peeled and cubed
- 750mls vegetable stock
- 1 bay leaf, 2 sprigs of thyme, 2 sprigs of rosemary (optional)
- 1 tablespoon olive oil
- 1 vegetable stock cube
- parsley
- salt and pepper
Directions:
- chop the onions and fry gently in olive oil, then put in the crushed garlic,
- add the washed pumpkin and sweet potato cubes, the bay leaf, thyme and rosemary then stir until all mixed together
- pour in enough water to cover, then boil until tender
- add the stock, salt, pepper and stock cube to season, then simmer until soft
- mash slightly for a chunky soup or blend for a creamy consistency, removing any herb stalks
- garnish with crème fraîche (optional) and parsley
- serve with garlic bread
